1996 gave Champagne sugar and acidity at the same time, and the early verdict was that the acidity was too much. Thirty years on, in the original release of Cristal, that same acidity is the reason the wine is still young.
Krug declared three vintages in a row — 1988, 1989, 1990 — and 1990 was the ripest of them. This was the original release, not the later Collection re-issue: thirty-six years under its own cork, and still carrying its acidity.
Piper-Heidsieck's Rare is declared only in the years the house thinks deserve the name. At thirty-eight, the 1988 was still standing on its acidity — deep gold, nuts and cinnamon, apple and honey trailing into salt.
